Aduki or Adzuki ( meaning good health in Japanese) Beans have been cultivated for thousands of years in China and Japan.They are dark red in colour and those imported from Japan are lightly polished to a bright sheen. Domestic and Chinese adukis are not polished and as a result have a slightly grittier texture. Aduki beans have a creamy texture and a pleasant nutty flavour. An excellent addition to a macrobiotic diet they can be used in an endless variety of ways - alone as a vegetable, mixed with rice or other grains or in soups or pasta dishes. Aduki beans can also be sprouted and taste very similar to mung bean sprouts. Nutritional Info: Pulses and beans supply abundant complex carbohydrates and are also a rich source of protein; in fact, pulses contain a higher proportion of protein than any other plant food. As the protein is incomplete, it is advised to eat pulses and beans with grains.
